Fruit and Nut Carrot Cake
Ingredients:
- Flour – 3/4 cup
- Wheat flour – 1/4 cup
- Grated carrot – 1/2 cup
- Yoghurt – 3/4 cups
- Olive oil – 1/4 cup (you can also use olive oil or sunflower oil)
- Milk – 3 tbsp
- Mixed Nuts – 1 Cup
- Raisins – ¼ Cup
- Dates – ¼ Cup
- Cranberries Chopped – 3tbsp
- Granulated Sugar – 3/4 cup
- Vanilla essence – 1/2 tsp
- Baking powder – 1/2 tsp
- Baking Soda – 1/2 tsp
- Salt -1/4 tsp
Procedure:
- In a pan prepare the cake mix.
- This is made of flour, butter, vegetable oil one teaspoon worth, baking powder and soda and the grated carrots.
- In this mixture, add roasted nuts, chopped raisins, dates and cranberries
- Now mix them all in and bake your nut and fruit carrot cake.
