Fruit and Nut Carrot Cake


Ingredients:

  • Flour – 3/4 cup
  • Wheat flour – 1/4 cup
  • Grated carrot – 1/2 cup
  • Yoghurt – 3/4 cups
  • Olive oil – 1/4 cup (you can also use olive oil or sunflower oil)
  • Milk – 3 tbsp
  • Mixed Nuts – 1 Cup
  • Raisins – ¼ Cup
  • Dates – ¼ Cup
  • Cranberries Chopped – 3tbsp
  • Granulated Sugar – 3/4 cup
  • Vanilla essence – 1/2 tsp
  • Baking powder – 1/2 tsp
  • Baking Soda – 1/2 tsp
  • Salt -1/4 tsp

Procedure:

  • In a pan prepare the cake mix.
  • This is made of flour, butter, vegetable oil one teaspoon worth, baking powder and soda and the grated carrots.
  • In this mixture, add roasted nuts, chopped raisins, dates and cranberries
  • Now mix them all in and bake your nut and fruit carrot cake.
