Mango, Coconut and Chia Pudding


Desserts stay a step high on the snack table. Those desserts that are in a way healthy can be had without excuse. One such is the mango, coconut and chia pudding.

Preparation time: Overnight

Recipe:

  • In a bowl take some chia seeds.
  • Collect milk from one whole coconut. (Do not dilute)
  • Grate some coconut and set aside.
  • Add coconut milk, vanilla syrup, a pinch of sea salt, honey and grated coconut to the chia seeds.
  • Whisk well and store in refrigerator.
  • Let it soak overnight or for a minimum of 4 hours.
  • Once the seed has expanded well and has softened take it out.
  • Add in cubes of ripe and sweet mango.
  • Give a light mix to have a good consistency.
  • Whisking it could loosen the consistency.
